Fried Honey Bites

Active | 30 MIN Total | 30 MIN Serves | 12

  • ½ cup (1 stick) unsalted butter
  • 1 cup water
  • 1 Tbsp sugar
  • ¼ tsp salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • Oil, for frying
  • ½ cup honey
  • 1 Tbsp orange blossom water or rosewater (in the baking aisle)
  • ¼ tsp ground cardamom

  • In a medium saucepan, combine the butter, water, sugar and salt. Bring the mixture to a boil, stirring occasionally to melt the butter. Remove from heat and stir in the flour. Return the mixture to medium heat and cook, stirring constantly, until it pulls away from the sides of the pan and forms a ball of dough, 1 to 2 minutes.
  • Transfer the hot mixture to a large bowl. Using an electric mixer on low speed, beat for 1 minute to cool slightly. Beat in the eggs one at a time (the dough will be smooth and shiny). Transfer the mixture to a pastry bag fitted with a large star tip.
  • Heat 2 in. oil in a medium pot to 350°F. In a microwave-safe measuring cup or bowl, combine the honey, orange blossom water and cardamom. Microwave on high for 30 seconds; transfer to a large bowl.
  • Working in 4 batches, squeeze 1-in.-long pieces of dough into the oil, using a knife or scissors to help cut them off. Fry until puffed and golden brown, 4 to 5 minutes. Transfer to a baking rack to cool; repeat with the remaining dough.
  • Once the honey bites have cooled, transfer to the bowl with the syrup and toss to coat.
